The Negroni
The only restaurant on Savile Row, Sartoria opened in 1998 to a Terence Conran design that translates Milanese tailoring into a Mayfair dining room, and now belongs to the Evolv Collection (formerly D&D London). Inside sits Sophia's Bar, an aperitivo room named for Sophia Loren and dressed in roses, alongside the cicchetti counter where the Italian wine list and a regional small-plates menu hold the floor. Its Negroni list is unusually deep for a restaurant bar, running from the classic build to a Prosecco-topped sbagliato, a lighter rosé vermouth version and a vintage pour combining 1980s gin, Campari and Carpano Punt e Mes for a richer, more leathery drink.
